I'd write a bunch of lines about how great camping is, but I don't feel like it. I just wanted to share this easy campfire recipe with you.

Getting out of the city and being one with nature is vital! If you haven't tried it, I highly suggest it. For city dwellers especially, the simplicity of camping will restore you to your core. None of that societal norms bullshit. Just you and the stars. There's something about a campfire that's so revitalizing. And is it just me, or does all meat taste better when camping?
I recently seared lamb chops while camping in Big Sur and it may have been the best meat I've had all year. It was such a fun and rewarding experience cooking outside of the kitchen.
The Recipe
Here's what you'll need:
Cast iron skillet
Olive oil
2 lamb shoulder chops
Kosher salt
Fresh ground pepper
Fresh chopped thyme
Handful of cloves of garlic, halved
3 tbsp water
Fresh chopped parsley
Pinch red pepper flakes
Fresh lemon juice
Campfire Lamb Chops
Prep Time: 10 minutes
Total Time: 15-20 minutes
Yield: 2 servings
Step 1
Start the campfire.
Step 2
Season the lamb with salt, pepper, and thyme.
Step 3
Heat olive oil in the cast iron skillet.
Step 4
Add lamb chops and garlic to the skillet and cook until browned on bottom (about 3 minutes). Flip chops and brown on the other side (about 2 minutes). Then remove chops from skillet.
Step 5
Add water, parsley, red pepper flakes, and lemon juice to skillet. Bring to sizzle. About 1 minute.
Step 6
Return lamb chops to skillet and mix with the parsley and red pepper flakes. About 1 minute. Then remove chops from skillet and serve.
